This natural process is also known as the dry process. After being harvested, the red coffee cherries are spread out on plastic mats and dried in the sun. Some coffee producers also dry them on brick terraces or on special drying tables that have airflow at the bottom. When dried in the sun, these coffee beans must be turned periodically to ensure even drying and to avoid mold or rotting.
In the natural process, the dried coffee fruit remains in cherry form, complete with all its layers. This natural process allows the cherries to ferment naturally, as the outer skin of the cherries will peel off by itself.
