Monosodium Glutamate, commonly known as MSG, is a sodium salt of
an amino acid (L-glutamic acid). It is a white crystalline
substance soluble in water and alcohol; practically odorless. MSG
is used to intensify flavours of foods. It is produced by a
bacterial fermentation process with starch or molasses as carbon
sources and ammonium salts as nitrogen sources (Steffen
process).
