Monascus red is a natural food pigment which
refers to the liquid monascus pigment obtained by
extracting red yeast rice with ethanol or the
product obtained by extracting, crystallizing and
refining from the deep culture liquid of monascus
aspergillus.It is the only natural functional food
pigment produced by microbial fermentation in the
world. It is one of the secondary metabolites of
Monascus.
